Les historiens ont trouv\u00e9 des preuves qu&rsquo;une boisson \u00e0 base de chocolat chaud, de lait et de cannelle \u00e9tait pr\u00e9par\u00e9e sur l&rsquo;\u00eele depuis au moins 1494. Les colons anglais ont exploit\u00e9 les plantations de cacao apr\u00e8s avoir pris possession de l&rsquo;\u00eele des Espagnols au XVIIIe si\u00e8cle. <\/p>\n<p>Le <strong>th\u00e9 au chocolat jama\u00efcain<\/strong> est une boisson traditionnelle g\u00e9n\u00e9ralement pr\u00e9par\u00e9e avec du cacao, des \u00e9pices comme la cannelle et du lait (principalement du lait de coco). Ce liquide chaud est \u00e9pais, riche et l\u00e9g\u00e8rement sucr\u00e9. <\/p>\n<p>Cependant, le chocolat jama\u00efcain n&rsquo;a jamais atteint le m\u00eame volume que le sucre ni obtenu autant de reconnaissance que le caf\u00e9 et le rhum de l&rsquo;\u00eele. Selon Forbes, la production de cacao a chut\u00e9 de 2 000 tonnes par an en 1995 \u00e0 200 \u00e0 400 tonnes en 2010. <\/p>\n<h2>Cacao Trinitario en Jama\u00efque<\/h2>\n<p>La Jama\u00efque est r\u00e9put\u00e9e pour la culture de la pr\u00e9cieuse vari\u00e9t\u00e9 de cacao Trinitario, reconnue pour son profil de saveur unique. La renaissance du Trinitario et d&rsquo;autres vari\u00e9t\u00e9s natives contribue \u00e0 la r\u00e9putation de la Jama\u00efque en tant qu&rsquo;origine \u00e9mergente de cacao de haute qualit\u00e9. La g\u00e9ographie diversifi\u00e9e de la Jama\u00efque, avec ses montagnes verdoyantes et ses plaines c\u00f4ti\u00e8res, participe au terroir unique qui influence les profils aromatiques du cacao jama\u00efcain.  <\/p>\n<p>La vari\u00e9t\u00e9 Trinitario, cultiv\u00e9e dans diff\u00e9rentes r\u00e9gions, offre des chocolats aux saveurs vari\u00e9es, allant des notes fruit\u00e9es et florales aux nuances \u00e9pic\u00e9es et noisett\u00e9es. Des r\u00e9gions comme St. Mary et St. Thomas commencent \u00e0 \u00eatre reconnues pour la production de cacao distinct en Jama\u00efque, mettant en avant l&rsquo;impact du terroir sur les subtilit\u00e9s aromatiques du chocolat jama\u00efcain. <\/p>\n<h2>Pure Chocolate Company en Jama\u00efque<\/h2>\n<p>L&rsquo;une des nouvelles marques de chocolat artisanal est Pure Chocolate Company. Rennae Johnson, n\u00e9e en Jama\u00efque, et son mari Wouter Tjeertes ont fond\u00e9 Pure Chocolate en 2017. Tous deux ont travaill\u00e9 comme chefs p\u00e2tissiers dans un complexe h\u00f4telier en Jama\u00efque avant de devenir partenaires (dans la vie et dans les affaires). Tjeertes a pass\u00e9 trois d\u00e9cennies en tant que chocolatier et chef p\u00e2tissier ex\u00e9cutif \u00e0 travers l&rsquo;Europe et les Cara\u00efbes.  <\/p>\n<p>Lorsqu&rsquo;ils ont lanc\u00e9 Pure Chocolate, leur objectif principal \u00e9tait de tout faire de mani\u00e8re aussi locale que possible. L&rsquo;entreprise utilise du cacao jama\u00efcain local, dont l&rsquo;origine peut \u00eatre retrac\u00e9e jusqu&rsquo;\u00e0 un petit groupe de producteurs aupr\u00e8s desquels elle ach\u00e8te directement \u00e0 des prix sup\u00e9rieurs \u00e0 ceux du march\u00e9. <\/p>\n<p>Pure Chocolate utilise des f\u00e8ves de Criollo et de Trinitario d&rsquo;origine unique provenant des montagnes John Crow, qui se trouvent \u00e0 proximit\u00e9 des Blue Mountains, o\u00f9 pousse le c\u00e9l\u00e8bre caf\u00e9 jama\u00efcain.
