Bien que les vari\u00e9t\u00e9s sp\u00e9cifiques de cacao \u00e0 Cuba ne soient pas aussi largement document\u00e9es que dans d&rsquo;autres r\u00e9gions, des efforts sont en cours pour identifier et pr\u00e9server les vari\u00e9t\u00e9s autochtones. <\/p>\n<p>Le <strong>Chorote<\/strong> est une boisson locale \u00e0 base de cacao moulu et de lait de coco fait maison. Parall\u00e8lement, le <strong>Rumbumba<\/strong> est la version nocturne du chorote, la diff\u00e9rence r\u00e9sidant dans l&rsquo;ajout de rhum local. <\/p>\n<h2>Histoire du Cacao \u00e0 Cuba<\/h2>\n<p>Le cacao a des racines historiques profondes \u00e0 Cuba, remontant \u00e0 l&rsquo;\u00e9poque des indig\u00e8nes Ta\u00efnos qui habitaient l&rsquo;\u00eele avant l&rsquo;arriv\u00e9e de Christophe Colomb. Les Ta\u00efnos cultivaient et consommaient le cacao, qu&rsquo;ils appr\u00e9ciaient non seulement comme une boisson, mais aussi comme une forme de monnaie et un \u00e9l\u00e9ment cl\u00e9 dans leurs rituels culturels. <\/p>\n<p>Avec la colonisation de Cuba par les Espagnols, le cacao s&rsquo;est int\u00e9gr\u00e9 \u00e0 l&rsquo;\u00e9conomie coloniale. De grandes plantations furent \u00e9tablies, et le cacao cubain contribua au r\u00e9seau commercial mondial. Cependant, comme dans d&rsquo;autres r\u00e9gions, l&rsquo;industrie du cacao d\u00e9clina \u00e0 la fin du XIXe si\u00e8cle en raison de facteurs tels que les maladies touchant les cacaoyers et les changements dans les priorit\u00e9s \u00e9conomiques.  <\/p>\n<p>Dans l&rsquo;\u00e8re post-coloniale, Cuba a connu des changements \u00e9conomiques, et l&rsquo;industrie du cacao a travers\u00e9 une p\u00e9riode de d\u00e9clin. L&rsquo;accent s&rsquo;est progressivement d\u00e9plac\u00e9 vers d&rsquo;autres cultures agricoles, et le cacao a perdu de son importance \u00e0 Cuba. <\/p>\n<p>L&rsquo;h\u00e9ritage du cacao a perdur\u00e9 comme une part importante du patrimoine agricole de Cuba, mais il a fallu des d\u00e9cennies avant qu&rsquo;un nouvel int\u00e9r\u00eat pour l&rsquo;industrie n&rsquo;\u00e9merge. Bien que des d\u00e9fis subsistent, notamment une infrastructure limit\u00e9e et un acc\u00e8s restreint \u00e0 la technologie, la reconnaissance du potentiel du cacao cubain est en pleine croissance. <\/p>\n<p><a href=\"https:\/\/mlh3lmrwtzmc.i.optimole.com\/cb:4BHN.4062b\/w:auto\/h:auto\/q:mauto\/f:best\/https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2024\/05\/Cacao-in-Cuba1.png\"><img loading=\"lazy\" decoding=\"async\" class=\"attachment-medium_large size-medium_large\" src=\"https:\/\/mlh3lmrwtzmc.i.optimole.com\/cb:4BHN.4062b\/w:768\/h:512\/q:mauto\/f:best\/https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2024\/05\/Cacao-in-Cuba1.png\" alt=\"Le cacao \u00e0 Cuba\" width=\"488\" height=\"325\" title=\"\"><\/a><\/p>\n<h2>La Production de Cacao \u00e0 Baracoa, Cuba<\/h2>\n<p>Baracoa, connue pour ses paysages luxuriants et son importance historique, attire de plus en plus l&rsquo;attention pour la production de cacao distinctif.<\/p>\n<p>La ville de Baracoa est au c\u0153ur de la fabrication de chocolat et des exportations de cacao de Cuba, repr\u00e9sentant environ 75 % de la r\u00e9colte de cacao du pays. Le climat tropical de la r\u00e9gion, chaud et b\u00e9n\u00e9ficiant de fortes pr\u00e9cipitations, est id\u00e9al pour la culture du cacao, ce qui a permis \u00e0 l&rsquo;industrie locale de prosp\u00e9rer. Cependant, lorsque l&rsquo;ouragan Matthew a frapp\u00e9 l&rsquo;\u00eele en octobre 2016, il a d\u00e9vast\u00e9 les cultures r\u00e9gionales, r\u00e9duisant presque de moiti\u00e9 les exportations de cacao.  <\/p>\n<p>Sa chocolaterie a \u00e9t\u00e9 inaugur\u00e9e par le c\u00e9l\u00e8bre gu\u00e9rillero Ernesto Che Guevara en 1963. R\u00e9cemment, l&rsquo;usine a int\u00e9gr\u00e9 des technologies suisses et italiennes, ce qui a doubl\u00e9 son efficacit\u00e9, portant la production \u00e0 3 000 tonnes de cacao par an, consolidant ainsi le r\u00f4le central de Baracoa dans l&rsquo;industrie du chocolat \u00e0 Cuba. <\/p>\n<h2>Recherche sur le Cacao \u00e0 Cuba<\/h2>\n<p>Il existe de nombreuses vari\u00e9t\u00e9s de cacao \u00e0 Cuba. Cela signifie que chaque chocolat cubain, qu&rsquo;il soit produit sur l&rsquo;\u00eele ou ailleurs, peut avoir un go\u00fbt diff\u00e9rent. Le pays dispose de branches enti\u00e8res de centres agricoles d\u00e9di\u00e9s \u00e0 l&rsquo;\u00e9tude du cacao, ce qui est bien m\u00e9rit\u00e9. \u00c0 mesure que les innovations technologiques venues de l&rsquo;ext\u00e9rieur deviennent accessibles sur l&rsquo;\u00eele, des \u00e9volutions vers un chocolat cubain plus homog\u00e8ne et de meilleure qualit\u00e9 pourraient se produire.   <\/p>\n<p>Comme presque toutes les cultures de base de la production agricole cubaine, le cacao poss\u00e8de \u00e9galement un centre de recherches scientifiques, dont le si\u00e8ge se trouve \u00e0 Baracoa, la capitale de ce fruit \u00e0 Cuba.<\/p>\n<p>La <strong>Station de Recherche sur le Cacao<\/strong> poss\u00e8de une banque de germoplasme qui conserve au moins dix r\u00e9pliques de chacun des 256 g\u00e9notypes de cacao existant dans le pays. Ce centre est principalement d\u00e9di\u00e9 \u00e0 la recherche et \u00e0 la cr\u00e9ation d&rsquo;hybrides \u00e0 haut rendement et r\u00e9sistants aux maladies. Plusieurs de ces hybrides, brevet\u00e9s, sont cultiv\u00e9s sur les champs depuis plusieurs ann\u00e9es avec de bons r\u00e9sultats.  <\/p>\n<h3>Conclusion<\/h3>\n<p>En conclusion, la culture du cacao \u00e0 Cuba peut jouer un r\u00f4le plus important dans l&rsquo;\u00e9conomie nationale, tant en termes de substitution des importations que d&rsquo;exportations.
