Animals of one species fenced off, or a sea of a single crop.&nbsp;<\/p>\n\n\n\n<p>But walking through the gates of cocoa farm <strong><a href=\"https:\/\/old.cocoacircle.com\/hacienda-rc\/\">Hacienda RC<\/a>, <\/strong>you see something different to any agricultural farm you\u2019ve likely seen before. You see a wildlife sanctuary.<\/p>\n\n\n\n<p>In Comalcalco, Tabasco, Mexico at Hacienda RC cacao isn\u2019t just a crop. It\u2019s part of a biodiverse ecosystem surrounded by towering fruit trees, shy howler monkeys, and the hum of life. Each species contributes something unique to the soil, feeding the circle of life.<\/p>\n\n\n\n<p>Sounds like a paradise. And, it\u2019s all kept alive thanks to one woman: <strong>Viridiana de la Cruz.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Protecting a Blessing&nbsp;&nbsp;<\/h2>\n\n\n\n<p>Viridiana didn\u2019t always imagine herself as a cocoa farmer. In fact, she worked in banking until the death of her father, Rosain de la Cruz. From that moment, the future of the family\u2019s farm was in doubt. Would the land be sold? Cleared for cattle?&nbsp;<\/p>\n\n\n\n<p>Not on Viri\u2019s watch.<\/p>\n\n\n\n<p>With the firm belief her family\u2019s hacienda was worth fighting for, she returned home to the rainforest.<\/p>\n\n\n\n<p>\u201cPeople said, \u2018You don\u2019t know how to work this land. You should sell it\u2019,\u201d she tells us. But for Viridiana, this was more than land. \u201cThis is a blessing. A blessing my father and grandfather worked for. And if they worked for it, why wouldn\u2019t I?\u201d<\/p>\n\n\n\n<p>Today, Viridiana tends the 13-hectare plantation with the help of her partner, Miguel, and her sisters \u2014 preserving a heritage that is as much about biodiversity and family as it is about quality cocoa.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"900\" src=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article.png\" alt=\"\" class=\"wp-image-35945\" title=\"\" srcset=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article.png 800w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article-267x300.png 267w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article-768x864.png 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">A Farm That\u2019s a Forest<\/h2>\n\n\n\n<p>Step into Hacienda RC, and you\u2019d understand why this place is worth the fight. It\u2019s an <strong>agroforestry paradise<\/strong>. Cacao trees flourish under the shade of tall fruit and wood trees. Oranges, mameys, peppers, cinnamon, and even coffee plants create a rich, balanced ecosystem.<\/p>\n\n\n\n<p>Here, life teems from the soil to the treetops. You\u2019ll spot squirrels, colourful birds, and families of howler monkeys swinging overhead \u2014 a species endangered by rising temperatures and drought.<\/p>\n\n\n\n<p>Viridiana knows that preserving this balance is the only way forward. \u201cWe nourish the land with organic fertilizers we make ourselves, nourishing the plant in drought,\u201d says Viri. While speaking, she prunes the cocoa trees with care, as to not damage flower cushions key to future growth.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"900\" src=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article-2-1.png\" alt=\"\" class=\"wp-image-35949\" title=\"\" srcset=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article-2-1.png 800w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article-2-1-267x300.png 267w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/09\/Hacienda-RC-Intro-Article-2-1-768x864.png 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">The Climate Battle<\/h2>\n\n\n\n<p>This heritage doesn\u2019t come easy. In recent years, unpredictable rains have delayed harvests, shrunk yields, and tested every farmer\u2019s resilience. In early 2024, fires ravaged 19% of the farm, destroying trees and impacting the delicate balance between soil, plant, and animal.<\/p>\n\n\n\n<p>Viridiana doesn\u2019t shy away from this reality. Instead, she faces it head on\u2014 planting new cacao trees and finding ways to help her crop adapt to the warming climate.<\/p>\n\n\n\n<p>One of the biggest challenges? Ensuring her cocoa beans dry evenly and avoid spoilage despite unpredictable seasons. Without a solution, her harvest goes to waste.<\/p>\n\n\n\n<p>\u201cWe had many problems with the sun because in March it starts with a lot, a lot of sun here for drying,\u201d Viri tells us.<\/p>\n\n\n\n<p>\u201cMaybe because we do not have the ideal infrastructure, then we suffer because of the sun. Because the grain, if it is not dried in a certain way, the pores close and inside, it cannot get its moisture out.<\/p>\n\n\n\n<p>\u201cSo what we want is for a grain to be well fermented and for a grain to be well dried because here, because of the humidity it can die.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A Legacy Calling<\/h2>\n\n\n\n<p>Viridiana and Miguel aren\u2019t just preserving cocoa. They\u2019re sharing it with the world. From creating a cosy tasting room and a small chocolate workshop, to hosting visitors with cacao pulp smoothies and beer pairings, they invite people to experience the many flavours of cocoa and the culture that shaped it.<\/p>\n\n\n\n<p>\u201cIf we work hard, we can actually be producers and tell the world, you know, that this is my cocoa, a fine aroma cocoa,\u201d Viri tells us.<\/p>\n\n\n\n<p>\u201cI want to do it for my children.
