She runs the cocoa farm Hacienda La Luz and chocolate factory <a href=\"https:\/\/www.instagram.com\/wolter_chocolates\/\" rel=\"nofollow noopener\" target=\"_blank\">Chocolate Wolter<\/a>, in Comalcalco, Tabasco. She\u2019s also a fierce defender of biodiversity.<\/p>\n\n\n\n<p>When we visited her at Hacienda La Luz, she reminded us that life doesn\u2019t exist in isolation. Every species needs others to survive.<\/p>\n\n\n\n<p>For Ana, protecting her cocoa farm isn\u2019t just about growing cacao. It\u2019s about protecting the rainforest itself. Keeping it safe from cattle farming, monocropping, and anything else that would strip the land bare.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The Jungle Leads the Way<\/h3>\n\n\n\n<p>Hacienda La Luz has been in Ana\u2019s family for over a century. Founded by her grandfather, a German doctor named Otto Wolter, it evolved from a cocoa plantation into a haven for biodiversity \u2014 a place where fruit trees, vanilla vines, cinnamon plants, and tall shade trees coexist to create a balanced, resilient ecosystem.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped wp-block-gallery-1 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"819\" data-id=\"35370\" src=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/07\/Blog-2-La-Luz-Img1-The-Heart-of-it-All-1-1024x819.jpg\" alt=\"cacao jungle farm\" class=\"wp-image-35370\" title=\"\" srcset=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/07\/Blog-2-La-Luz-Img1-The-Heart-of-it-All-1-1024x819.jpg 1024w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/07\/Blog-2-La-Luz-Img1-The-Heart-of-it-All-1-300x240.jpg 300w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/07\/Blog-2-La-Luz-Img1-The-Heart-of-it-All-1-768x614.jpg 768w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/07\/Blog-2-La-Luz-Img1-The-Heart-of-it-All-1.jpg 1350w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n<\/figure>\n\n\n\n<p>\u201cYou need to have the shade of the big trees in order for the cacao to grow and produce,\u201d Ana tells us, walking us through the plantation.<\/p>\n\n\n\n<p>\u201cYou see over there?,\u201d says Ana, pointing to three towering trees nearby. \u201cThis is a gaucho tree, this is a red cedar and this is a mango manila.\u201d<\/p>\n\n\n\n<p>\u201cAll of them are together, like this.\u201d Ana reaches her arms out before grasping opposite elbows to demonstrate. She\u2019s referring to the root system of the trees holding one another up.<\/p>\n\n\n\n<p>\u201cWhen there is wind, then one will help another to remain like this and not to fall.\u201d<\/p>\n\n\n\n<p>\u201cSo, the main lesson we can learn from nature is that the only way that we have to preserve this planet is working together, cooperation between different species.\u201d<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ana Against the Odds<\/h3>\n\n\n\n<p>Today, Ana\u2019s work is harder than ever. The rains that used to come reliably every year now arrive late or not at all. The cacao pods that were once abundant now come too slowly, forcing Ana to adapt and rethink every cocoa cultivating decision.<\/p>\n\n\n\n<p>The sacred planting days \u2014 like the traditional Day of the Cross \u2014 no longer guarantee the rains that farmers and the rainforest depend on.<\/p>\n\n\n\n<p>Ana tells us farmers are looking at irrigation.<\/p>\n\n\n\n<p>\u201cMaybe I have the solution to have cacao. But I have another problem because we are going to need a lot of water,\u201d says Ana.<\/p>\n\n\n\n<p>\u201cSo we need to think, as humanity, we need to think about the problem and the root of the problem. The problem is that the weather is changing and it&#8217;s becoming extreme. You know, in some parts there is no rain and in some others there are a lot of floods.\u201d<\/p>\n\n\n\n<p>\u201cWe are making that happen.\u201d<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The Heart of It All<\/h3>\n\n\n\n<p>For Ana, Hacienda La Luz is about more than cacao. This is to preserve the original jungle,\u201d Ana tells us.<\/p>\n\n\n\n<p>\u201cIn Tabasco, we have lost 98% of our original jungle. Because we have the oil industry here, because we have cows, a lot of cows, because the growing of people and cities.\u201d<\/p>\n\n\n\n<p>In the rainforest, a cacao tree doesn\u2019t stand alone. It\u2019s surrounded by a network \u2014 fruit trees, shade trees, animals, pollinators. Together, they create balance.<\/p>\n\n\n\n<p>This is why she doesn\u2019t just plant cacao. She plants mango, caimito, jackfruit, and sapote. She protects endangered species. She welcomes wildlife, describing Hacienda La Luz as \u2018a domesticated jungle\u2019.
