A lot of effort, love, passion.\u201d<\/p>\n\n\n\n<p>This was the final farm on our journey to Mexico, La Campesina Del Cacao in Tecolutilla, Tabasco.<\/p>\n\n\n\n<p>And at <a href=\"https:\/\/old.cocoacircle.com\/la-campesina\/\">La Campesina<\/a>, effort, love and passion is exactly what you find. You don\u2019t just see where cocoa grows \u2014 you experience a culture it belongs to. The leader of the collective and a powerhouse of knowledge, Estela L\u00e1zaro, or Do\u00f1a Estelita as she\u2019s affectionately called, welcomes visitors to a world where cocoa is much more than a crop. It\u2019s a symbol of heritage, resilience, and a way to a better future.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cocoa Gastronomy&nbsp;<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"900\" src=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco-2.png\" alt=\"\" class=\"wp-image-36242\" title=\"\" srcset=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco-2.png 800w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco-2-267x300.png 267w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco-2-768x864.png 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p>Estelita is a third generation cocoa farmer with a deep spiritual connection to the land that surrounds her. And to cocoa. Working together as a collective with eight women and four men, Estelita leads La Campesina \u2014 a cooperative dedicated to preserving the heritage of cocoa and its role in the traditional gastronomy of Tabasco.<\/p>\n\n\n\n<p>When you visit La Campesina, you see this heritage in action. Estelita welcomes guests into her open kitchen, where she prepares farm-to-plate dishes using traditional Tabascan methods. She grinds cacao by hand, roasts the beans over a comal, and makes drinks like Charote and Chocolate al Agua \u2013 all while sharing the stories behind each recipe and ingredient.<\/p>\n\n\n\n<p>\u201cWe want to share the authentic flavours of cacao with the world,\u201d says Estelita.<\/p>\n\n\n\n<p>For her, cocoa isn\u2019t just a crop. It\u2019s part of her family\u2019s story, her community\u2019s identity, and a tradition she is determined to keep alive for future generations.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Farm as a Forest<\/h2>\n\n\n\n<p>For Estelita, cocoa farming is a conversation with the land. The cacao trees don\u2019t stand alone here. They grow surrounded by fruit trees, shade trees, and fragrant herbs. This approach, called agroforestry, mimics the structure of a forest. It\u2019s a method that doesn\u2019t just produce delicious cacao \u2014 it creates habitats for monkeys, squirrels, and countless species of birds.<\/p>\n\n\n\n<p>At La Campesina, every planting decision, every compost heap, every sip of cacao is a step toward protecting the land that has sustained generations.<\/p>\n\n\n\n<p>But today, the rains don\u2019t come as reliably as they used to. Rising temperatures have reshaped the planting and harvest cycles, and farms all around are burning their organic waste, only worsening conditions.<\/p>\n\n\n\n<p>Each year is a challenge, Estelita admits. But she\u2019s putting in the work to show the world there\u2019s a way forward \u2014 leaning into the ancient knowledge of the land and pairing it with innovative regenerative farming practices.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Key to Better Farming&nbsp;<\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"900\" src=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco.png\" alt=\"\" class=\"wp-image-36244\" title=\"\" srcset=\"https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco.png 800w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco-267x300.png 267w, https:\/\/old.cocoacircle.com\/wp-content\/uploads\/2025\/11\/Campesina-Intro-Doco-768x864.png 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p>Through composting, biofertilizers, and a strict no-chemicals approach, she and her team have kept the farm productive and balanced. The results? A healthy cacao crop and a living example for others in the region.<\/p>\n\n\n\n<p>Estelita puts the spotlight on one plot in particular that flourished after a dose of her organic, regenerative care.<\/p>\n\n\n\n<p>\u201cMany temperatures were tremendous, but the cocoa trees did not die,\u201d she says, \u201crather they remained there and right now at this moment they are flowering.\u201d<\/p>\n\n\n\n<p>It\u2019s these learnings that give cocoa farmers, and those watching, hope. But Estelita isn\u2019t keeping her lessons to herself. It\u2019s a cultural and gastronomic center where visitors can learn the heritage of cacao and the role it plays in Tabasco\u2019s cuisine. From making traditional drinks like <em>Chocolate al Agua<\/em> to roasting cacao over wood fires, it\u2019s an experience for the senses.<\/p>\n\n\n\n<p>Her passion?
